- 1 pound smoked sausage, cut into chunks
- 2 tablespoons vegetable oil
- 1 medium onion, sliced thick
- 2 cloves garlic, minced
- 1 cup chicken broth
- 3 to 4 medium potatoes, cut into bite-sized pieces
- 12 ounces green beans (fresh or frozen)
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
Instructions
- Turn your 6-quart Instant Pot on to the sauté setting and add the oil.
- While it heats up, slice your sausage into thick chunks.
- Once the oil is hot, sauté the sausage pieces until they’re lightly browned. This adds flavor. Remove the sausage and set it aside on a plate.
- Add the sliced onion and minced garlic to the pot. Sauté until they soften and turn golden—about 3 to 4 minutes.
- Keep the pot on sauté and pour in the chicken broth. Use a wooden spoon to scrape up any browned bits from the bottom. That’s where a lot of the flavor lives.
- Add in the chopped potatoes, green beans, and browned sausage. Give everything a good stir.
- Close the lid, seal the valve, and pressure cook on high for 2 minutes.
- As soon as the timer goes off, carefully perform a quick release to let out all the steam.
- Open the lid and season everything with salt and pepper to taste. Give it a gentle stir and serve hot.
