    Ingredients 1 pound extra lean ground beef 1 medium onion, chopped 1 can kernel corn, drained 1 can black beans, rinsed and drained 1 packet taco seasoning mix 8 to 12 corn tortillas 3/4 cup nonfat sour cream 1/3 cup Mexican blend cheese or taco cheese, shredded Sliced jalapeño peppers Instructions Cook the Beef Mixture Preheat your oven to 350°F (175°C). In a large skillet over medium heat, cook the ground beef and chopped onion for 10 to 12 minutes until browned. Drain excess grease if needed. Stir in the corn, black beans, and taco seasoning. Mix well and simmer for 5 minutes. Assemble the Casserole Lightly spray a 2 quart baking dish (about 8x12 inches) with cooking spray. Layer half of the corn tortillas across the bottom of the dish. Spoon half of the beef mixture over the tortillas. Spread the sour cream evenly over the beef layer. Add the remaining tortillas, then top with the remaining beef mixture. Bake Bake uncovered for 25 minutes. Remove from the oven and sprinkle shredded cheese and sliced jalapeños over the top. Return to the oven for another 5 minutes, or until the cheese is melted. Let the casserole rest for 5 minutes before serving. Notes Add diced tomatoes or green chilies for extra flavor. Ground turkey can replace ground beef for a lighter version. Serve with salsa, avocado, or fresh cilantro on top. MEXICAN BEEF CASSEROLE
