1 (32 oz) bag frozen hashbrowns
1 small onion, diced
2 cups shredded cheddar cheese
½ cup sour cream
½ cup milk
1 (10 oz) can cream of mushroom or cream of chicken soup
½ teaspoon minced garlic (more if you love garlic)
½ teaspoon onion powder
Salt and black pepper, to taste
½ cup extra shredded cheddar (for topping)

Instructions

Prepare the casserole:
Start by greasing your slow cooker or lining it with a crockpot liner for easier cleanup.
Add the sausage, hashbrowns, diced onion, and 2 cups of cheddar cheese to the crockpot.

In a medium bowl, whisk together the soup, milk, sour cream, garlic, onion powder, salt, and pepper until it’s smooth and creamy.
Pour the mixture over the ingredients in the crockpot. Give everything a good stir to make sure it’s well coated.

Sprinkle the remaining ½ cup of cheddar cheese over the top.

Cook:
Cover and cook on LOW for 6 hours or HIGH for 3 to 4 hours, until the hashbrowns are soft and everything is hot and bubbling with cheesy goodness.

Serve:
Scoop it into bowls or onto plates and pair with a side salad, roasted green beans, or thick slices of Texas toast. It’s a warm, filling meal that doesn’t need much else.
