Texas German Potato Salad Recipe

Texas German Potato Salad Recipe is a creamy, savory side dish loaded with potatoes, crispy bacon, eggs, and a tangy dressing. This hearty version combines rich flavors and a smooth texture, making it a perfect side for BBQs, cookouts, or family dinners.

Ingredients

  • 2 pounds red potatoes, scrubbed
  • 1 (12 oz) package sliced bacon
  • 2 cups sour cream
  • 2 tablespoons light mayonnaise
  • 2 tablespoons prepared yellow mustard
  • 1 bunch green onions, chopped
  • 3/4 cup chopped green olives
  • 5 hard-cooked eggs, chopped
  • 1 pinch Italian seasoning
  • 2 tablespoons ranch salad dressing
  • Paprika, for garnish

Instructions

Cook the Potatoes

  1. Place potatoes in a large pot and cover with water.
  2. Bring to a boil and cook until fork-tender.
  3. Drain, let cool slightly, then cut into cubes.

Cook the Bacon

  1. In a skillet over medium heat, cook bacon until crispy.
  2. Remove bacon and drain on paper towels.
  3. Save some of the bacon grease for extra flavor.

Mix the Salad

  1. In a large bowl, combine potatoes, sour cream, mayonnaise, mustard, green onions, olives, eggs, Italian seasoning, and ranch dressing.
  2. Add crumbled bacon and drizzle in about half of the reserved bacon grease.
  3. Stir gently until everything is evenly coated.

Serve

Sprinkle paprika on top and serve chilled or at room temperature.

Notes

  • For stronger flavor, add a bit more mustard or bacon grease.
  • Let it chill for 1 hour before serving for best taste.
