Ingredients

  • 2 pints (~900g) cherry tomatoes
  • 6 tablespoons olive oil
  • 8-10 cloves garlic (chopped)
  • 1/2 tablespoon black pepper
  • 1/2 tablespoon salt
  • 1/2 tablespoon oregano
  • 8oz (~227g) feta cheese
  • ~150g pasta
  • (Optional) 1/2 tablespoon chili flakes, fresh basil, fresh parsley

Instructions

  1. Preheat the Oven:
    Preheat your oven to 400°F (204°C).
  2. Prepare the Tomatoes and Garlic:
    In a baking tray, add 2 pints of cherry tomatoes and chopped garlic. Drizzle 6 tablespoons of olive oil over the top.
  3. Season:
    Add 1/2 tablespoon of black pepper, 1/2 tablespoon of salt, and 1/2 tablespoon of oregano. If you like spice, sprinkle in 1/2 tablespoon of chili flakes. Mix everything together.
  4. Add the Feta:
    Place the 8oz block of feta cheese in the center of the tray. Drizzle a bit more olive oil and add a little more seasoning on top of the cheese.
  5. Bake and Broil:
    Bake in the oven for 25 minutes. After that, switch to broil and let it cook for an additional 5 minutes to get a golden-brown finish on the feta. Total cook time is 30 minutes.
  6. Cook the Pasta:
    While the feta and tomatoes are in the oven, cook your pasta according to the package instructions. Once done, drain and set aside.
  7. Mash and Mix:
    Once the feta and tomatoes are done, remove the baking tray from the oven. Use a spoon to mash the tomatoes and feta together to create a creamy sauce.
  8. Combine:
    Mix in your cooked pasta until everything is well-coated with the sauce. (Optional: Top with fresh basil or parsley before serving.)

You can experiment with different herbs like rosemary or thyme for added flavor.
