Ingredients
- 36 oz frozen cauliflower
- 1 cup water
- ½ cup sour cream
- 1½ cups shredded sharp cheddar cheese
- 1½ cups shredded mozzarella cheese
- 5 oz cooked bacon bits
- 3 green onions, diced
How to Make Cheesy Cauliflower Casserole
1. Cook the Cauliflower
Add the frozen cauliflower and 1 cup of water to a large pan over medium-high heat. Cover with a lid and cook for about 15 minutes, stirring every 5 minutes.
Tip: Check tenderness by slicing into the larger pieces—if they’re still cool in the center, cook a bit longer.
2. Mix the Casserole
Drain any extra water. Stir in the sour cream, half of the cheddar, half of the mozzarella, and half of the bacon. Mix until creamy and well combined.
3. Assemble and Bake
Transfer the mixture to a greased 9×13″ baking dish. Sprinkle the remaining cheese and bacon on top.
Bake at 350ºF for 15 minutes, or until the cheese is gooey and bubbling.
4. Garnish and Serve
Top with fresh diced green onions and serve hot!
Perfect Pairings
- Pair with grilled chicken or steak for a complete keto dinner
- Serve alongside a fresh green salad or roasted veggies
- Great for potlucks, holidays, or cozy weeknights
Notes
- Frozen cauliflower is a time-saver, but you can also use steamed fresh cauliflower.
- Add spice with a pinch of cayenne or red pepper flakes.
- Make it vegetarian by skipping the bacon (or using plant-based bacon bits).
