When you’re feeding a big group, whether it’s a church gathering, family reunion, potluck, or holiday dinner, you need something that’s easy, satisfying, and guaranteed to please. That’s where these cheesy potatoes come in. They’re rich, creamy, and packed with melted cheddar goodness. Best part? This recipe makes a lot, so no one goes home hungry.
I’ve made this dish more times than I can count. It’s a go-to anytime I’m cooking for a crowd. These potatoes always get rave reviews and you’ll probably leave the event with more than a few recipe requests. They’re comforting, filling, and just plain good.
Ingredients
- 3 (22-ounce) cans cream of chicken soup
- 6 cups sour cream
- 6 sticks butter, softened
- 12 pounds Southern Style hashbrown potato cubes (frozen is fine)
- 80 ounces shredded cheddar cheese
Instructions
- Start by greasing a 22-quart electric roaster pan really well. Set it to 350°F so it’s ready to go when you are.
- Pour one-quarter of the hashbrowns into the bottom of the roaster and spread them out evenly.
- In a large mixing bowl, combine half of the cream of chicken soup, half of the sour cream, and half of the softened (or melted) butter. Stir until smooth.
- Pour that mixture over the potatoes in the roaster, then sprinkle half of the shredded cheddar cheese over the top.
- Add another one-quarter of the potatoes and mix everything together gently with a large spoon. At this point, half of all your ingredients should be in the roaster.
- Now pour in the remaining potatoes. In a clean bowl, mix together the rest of the soup, sour cream, and butter. Pour that over the top and mix well again.
- Cover with the roaster lid and cook for at least 3 hours, stirring every 20 to 30 minutes to prevent sticking and make sure the heat is distributed evenly. Cook until the potatoes are tender and everything is hot and creamy.
These cheesy potatoes hold well, reheat beautifully, and are just as good the next day. If you’ve got leftovers, they make a great breakfast side with scrambled eggs or even tucked into a breakfast burrito.
