Ingredients

  • 2 cups flour
  • 4 teaspoons baking powder
  • 2 teaspoons sugar

  • 2 eggs (beaten)

Instructions

  1. Preheat the Oven:
    Preheat your oven to 400°F (200°C).
  2. Mix the Dry Ingredients:
    In a large bowl, mix and sift together 2 cups of flour, 4 teaspoons of baking powder, 2 teaspoons of sugar, and ½ teaspoon of salt.
  3. Rub in the Butter:
    Cut 4 tablespoons of butter into small pieces. Using your fingertips, rub the butter into the dry ingredients until the mixture resembles coarse crumbs.
  4. Add Wet Ingredients:
    In a separate bowl, beat 2 eggs. Add the beaten eggs and ⅓ cup of cream to the dry ingredients, stirring gently to combine until a soft dough forms.
  5. Shape the Dough:
    Lightly flour a clean surface and toss the dough onto it. Pat and roll the dough to about ¾ inch in thickness.
  6. Cut into Squares:
    Using a knife or pastry cutter, cut the dough into squares. Transfer the squares to a baking sheet lined with parchment paper.

    Brush the tops of the scones with the white of an egg and sprinkle with extra sugar for a sweet, crispy finish.
