Crockpot Chicken Spaghetti

This Crockpot Chicken Spaghetti is the kind of comfort food you make once and never forget. It’s creamy, cheesy, full of flavor, and honestly, just one of those meals that makes everyone around the table happy. I’ve been making this on busy weeknights when I need something filling but don’t have time to stand over the stove.

The slow cooker does all the hard work here. You toss in your ingredients, walk away, and a few hours later, dinner is ready. And if your family is anything like mine, this dish won’t last long.

Ingredients
1 lb of chicken (I use boneless, skinless breasts)
1/2 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon onion powder
1 teaspoon dried parsley
1 teaspoon paprika
2 cans cream of chicken soup (10.5 oz each)
1 can Rotel (10 oz, not drained)
1 tablespoon minced garlic
2 cups shredded Colby Jack cheese (or any cheese you love)
1/4 cup sour cream
1 lb spaghetti

Instructions

  1. Start by spraying a large crockpot with cooking spray so nothing sticks.
  2. Add the raw chicken, all the seasonings, minced garlic, both cans of cream of chicken soup, and the full can of Rotel (juice and all). Give it a good stir to mix everything together.
  3. Cover and cook on low for 4 to 6 hours, until the chicken is cooked through and tender.
  4. Once the chicken is done, take it out and shred it or cut it into small pieces. Then add it back into the crockpot.
  5. Stir in the sour cream and shredded cheese. Let everything melt together and get creamy.
  6. While the cheese is melting, cook your spaghetti noodles according to the package directions. Drain them and then add them straight into the crockpot.
  7. Mix everything together really well so that cheesy sauce coats all the noodles. Serve warm and enjoy.

This meal is perfect on its own, but I like to serve it with a side of garlic bread or a fresh green salad. It’s hearty, comforting, and kid-friendly too.
