Parmesan Garlic Chicken Mac and Cheese

Ingredients

  • 1 lb chicken breast
  • 1/2 tsp each of salt, pepper, paprika, and garlic powder
  • Buffalo Wild Wings Parmesan Garlic Sauce (enough to coat the chicken, plus a little extra if desired)
  • 8 oz elbow macaroni noodles
  • 2 cups whole milk
  • 2 1/2 cups Colby Jack cheese, shredded
  • 8 oz cream cheese, softened and cubed
  • Freshly grated Parmesan cheese (for topping)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prep the chicken:
    Add the chicken breasts to your slow cooker. Sprinkle with salt, pepper, paprika, and garlic powder. Pour just enough of the Parmesan Garlic Sauce over the top to coat the chicken well.
  2. Slow cook:
    Cover and cook on low for about 4 hours, or until the internal temperature of the chicken reaches 165°F. Once cooked, shred or chop the chicken and return it to the slow cooker. If you want a little extra flavor, add a bit more of the Parmesan Garlic Sauce and stir to coat.
  3. Parboil the pasta:
    While the chicken is cooking, bring a pot of water to a boil and cook the elbow macaroni for just 3 minutes. Drain and set aside. The pasta will finish cooking in the slow cooker, soaking up all that creamy goodness.
  4. Mix it all together:
    Add the parboiled macaroni, milk, shredded Colby Jack cheese, and cubed cream cheese to the slow cooker with the chicken. Stir everything together until well combined.
  5. Cook until creamy:
    Continue cooking on low for about 1 more hour, stirring a few times during the hour to make sure everything melts evenly and the pasta cooks through.
  6. Serve:
    Once everything is hot, cheesy, and creamy, top with freshly grated Parmesan cheese and chopped parsley just before serving.
