Pepper Steak in a Crock Pot is one of the easiest ways to get tender beef with big flavor. The slow cooker does all the work while the beef, peppers, and sauce come together into a warm and satisfying meal. This recipe is perfect for busy days when you want something hearty without standing over the stove.
Ingredients
For the Pepper Steak:
- 2 pounds beef sirloin, cut into 2 inch strips
- 3/4 teaspoon garlic powder
- Salt, to taste
- 3 tablespoons vegetable oil
For the Sauce and Veggies:
- 1 beef bouillon cube
- 1/4 cup hot water
- 1 tablespoon cornstarch
- 1/2 cup chopped onion
- 2 large green bell peppers, roughly chopped
- 1 can (14.5 oz) stewed tomatoes with liquid
- 3 tablespoons soy sauce
- 1 teaspoon white sugar
Instructions
- Season the beef strips with garlic powder and a bit of salt.
- Heat the oil in a large skillet over medium heat. Sear the beef for about 5 minutes per side until browned. Move the beef to the slow cooker.
- In a small bowl, dissolve the bouillon cube in the hot water. Stir in the cornstarch until smooth, then pour it over the beef.
- Add the onion, green peppers, and stewed tomatoes. Stir in the soy sauce and sugar. Mix gently.
- Cover and cook on Low for 6 to 8 hours or on High for 3 to 4 hours, until the beef is tender.
- Serve over rice or mashed potatoes and spoon some sauce on top.
Notes
Leftovers hold up well for meal prep.
You can use red or yellow peppers for a sweeter flavor.
If you like a thicker sauce, stir in an extra teaspoon of cornstarch during the last 30 minutes.
