This Ranch Taco Soup is one of those cozy, stick-to-your-ribs recipes that always hits the spot. It’s packed with flavor, hearty enough to fill you up, and perfect for busy days when you just want to toss everything in the crock pot and let it do the work.
I’ve made this soup for game days, church potlucks, and lazy Sundays—and every single time, someone asks for the recipe. It’s savory, a little spicy, and has just the right touch of tang from the ranch seasoning. The best part? It feeds a crowd and gets even better the next day.
Ingredients
- 1 1/2 pounds ground beef
- 1 small onion, chopped
- 1 small green pepper, chopped
- 1/2 teaspoon minced garlic
- 1/2 teaspoon black pepper
- 1/2 teaspoon cumin
- 1 teaspoon salt
- 1 (15 oz) can Bush’s pinto beans, undrained
- 1 (15 oz) can Bush’s black beans, undrained
- 1 (15 oz) can Bush’s kidney beans, undrained
- 1 (15 oz) can whole kernel white sweet corn, drained
- 1 (14.5 oz) can petite diced tomatoes, undrained
- 1 (4 oz) can chopped green chilies
- 1 (1.5 oz) package taco seasoning
- 1 (1 oz) package ranch dressing mix
Instructions
Start by browning the ground beef in a skillet along with the chopped onion, green pepper, garlic, black pepper, cumin, and salt. Cook until the beef is fully browned and the vegetables are tender.
Once that’s ready, transfer the beef mixture to your crock pot. Add in all the remaining ingredients—the beans, corn, tomatoes, green chilies, taco seasoning, and ranch mix. Give everything a good stir so it’s well combined.
Cover and cook on low for 2 to 3 hours. That’s it.
This recipe fills a 3-quart crock pot nearly to the top and makes around 10 to 12 generous servings. It’s a great meal to make ahead, and leftovers reheat beautifully.
Serving Suggestions
I like to serve this soup with a dollop of sour cream, a sprinkle of shredded cheese, and a handful of crushed tortilla chips on top. You can even add sliced avocado or a splash of hot sauce if you’re feeling bold.
Whether you’re feeding a big family or just looking for something warm and easy, this Ranch Taco Soup is a keeper. It’s flavorful, filling, and just the kind of comfort food we all need from time to time.
