Sausage Bubble Up Pizza Casserole

If you’ve got a hungry crew and not a lot of time, this sausage bubble up pizza casserole is exactly what you need. It’s cheesy, hearty, and packed with pizza flavor—without the fuss of making dough from scratch. The biscuits do all the heavy lifting, bubbling up into soft, golden pillows of goodness underneath a layer of sausage, sauce, and melty cheese.

This dish is one of my family’s weeknight favorites. It’s kid-friendly, crowd-pleasing, and easy enough to throw together after a long day. Plus, it smells incredible while it’s baking.

Ingredients

  • 1 1/2 pounds sausage
  • 2 tubes refrigerated biscuits
  • 1 can pizza sauce (about 14–15 oz)
  • 2 cups shredded mozzarella cheese
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 400°F and coat a 9×13 inch baking dish with non-stick cooking spray.
  2. Cut each biscuit into 6 to 8 pieces and spread them evenly in the bottom of the baking dish.
  3. In a skillet, cook the sausage until browned and fully cooked. Drain off any extra grease, then stir in the pizza sauce.
  4. Pour the sausage and sauce mixture over the biscuit pieces in the baking dish.
  5. Bake uncovered for 20 minutes.
  6. Remove from the oven, sprinkle mozzarella and cheddar cheese evenly over the top, and return to the oven.
  7. Bake for another 5 to 10 minutes, until the cheese is melted and bubbly.

Let it sit for just a few minutes before serving, those biscuit pieces are piping hot when they first come out of the oven.

This recipe is endlessly customizable. Add pepperoni, bell peppers, mushrooms, or olives if your family likes a little variety. Or keep it simple, just the way we like it cheesy, saucy, and satisfying.
