I grew up on casseroles like this. They were a regular part of our weeknight dinners, especially during the colder months. There’s just something about the combo of smoked sausage, creamy potatoes, and melted cheddar cheese that hits all the right notes. This one’s a real crowd-pleaser and so easy to throw together with just a few pantry and fridge staples.
Ingredients
- 1 package (26 oz) shredded hash browns
- 1 cup sour cream
- 1 can (10.5 oz) cream of mushroom soup
- 3 cups shredded cheddar cheese, divided
- 1/2 teaspoon black pepper
- 1 teaspoon salt (optional, depending on your sausage)
- 1 pound smoked sausage, sliced
Instructions
- Preheat your oven to 350°F and lightly grease a 9×13 baking dish.
- In a large mixing bowl, pour in the shredded hash browns.
- Add the sour cream and cream of mushroom soup right on top of the potatoes. Sprinkle in the pepper and salt (if you’re using it), then mix everything together until well combined.
- Stir in 2 cups of the shredded cheddar cheese.
- Spread the mixture evenly into your prepared baking dish and bake for 35 minutes.
- After 35 minutes, remove the casserole from the oven. Layer the sliced smoked sausage on top and sprinkle with the remaining 1 cup of cheddar cheese.
- Return the dish to the oven and bake for an additional 15 to 20 minutes, or until the sausage is hot and the cheese is melted and bubbly.
This casserole is pure comfort. It’s rich, filling, and has that perfect smoky flavor from the sausage. You can serve it as a main dish or bring it to a potluck—it’s always a hit either way.
If you have leftovers, they reheat beautifully the next day. Just pop a slice in the microwave and you’re good to go. This recipe is one of those easy weeknight dinners that just works, and I think once you try it, it’ll become a regular in your kitchen too.
